Overnight Steel Cut Oats (vegan)

Steel-cut oats are a great source of manganese (which is important for supporting bone health), biotin (part of the B vitamin complex crucial for the health of your skin and nervous system), as well as a go-to source for soluble fiber known as beta-glucan, which helps to lower bad LDL cholesterol in the body. This can lead to better heart health, better-stabilized blood sugar, and better digestive health. This easy overnight steel cut oat recipe is great because they are made ahead of time, saving you from cooking in the morning. And you can add different toppings (fruits, berries, nuts, chia seeds, flax seeds, hemp seeds, etc.) for flavor and more added nutritional value.

Overnight Steel Cut Oats:
servings 2-4

1 1/2 cups water

1 1/2 cups almond milk (or any plant-based milk) 

1 cup steel-cut oats (gluten-free if needed)

pinch of salt

1/2 tsp cinnamon

2 tsp all-natural organic maple syrup (or any sweetener you love)


Directions:

Add the water and almond milk to a small pot and bring to a boil.

Add the oats, salt, cinnamon, and maple syrup, reducing heat to medium and stirring for 2-3 minutes.

Turn off the heat and add cooked oats to glass containers. I use small mason jars for mine.

Let sit in the fridge overnight.

In the morning enjoy the oats cold or heat them up, and add your toppings! I added bananas, raw almonds, and shredded coconut to mine!

Notes

Make sure to use steel-cut oats!

Using a mix of water and plant-based milk will help give you super creamy oats. 

Don’t skip out o the pinch of salt. It will help bring out the flavor of the oats.
