Cauliflower Chickpea Shawarma Bowl w/ Tahini Dressing (Vegan)
This delicious & easy Cauliflower Chickpea Shawarma Bowl with Tahini Dressing is packed with lovely aromatic spices & flavors! And I love that this dish has anti-inflammatory properties because of the added turmeric! I definitely love a lot of squeezed lemon & tahini dressing on this! I hope enjoy it!
Shawarma Spice Blend:
2 tsp black pepper
2 tsp cumin
2 tsp paprika
1 tsp Himalayan salt
1/2 tsp turmeric
1/2 tsp red pepper flakes
1/4 tsp garlic powder
Lemon Tahini Dressing:
½ cup tahini
½ cup water
¼ cup extra virgin olive oil
1 lemon, juiced
Salt, to taste
Black pepper, to taste
Cauliflower Shawarma Ingredients:
1 head cauliflower, cut into bite-sized florets
2 tbsp extra virgin olive oil
Chickpea Shawarma Ingredients:
2 tsp extra virgin olive oil
1 1/2 tsp Shawarma Spice Mix
1–15oz can chickpeas, rinsed & drained
1/4 tsp salt, to taste
1 tbsp chopped fresh parsley
Tomato Cucumber Salad:
cherry tomatoes
persian cucumbers
red onion, thinly sliced
chopped parsley
chopped mint
1 lemon juiced
Cauliflower Directions:
Heat the oven to 400*F. .
Mix the shawarma spice blend until all ingredients are evenly distributed.
Toss the cauliflower with 2 tablespoons of olive oil & just over half the spice blend. Set the remaining spice blend aside to use for chickpeas.
Place the baking sheet in the oven & roast, rotating once halfway through, about 25 minutes total.
Remove the cauliflower from the oven & sprinkle with the lemon juice. .
While the cauliflower is roasting, make the chickpeas and the tomato cucumber salad. Place the tomatoes, cucumbers, red onion, mint & parsley in a small bowl, some lemon juice, season with ½ tsp salt and ½ tsp pepper and toss.
Chickpea Directions:
Heat the olive oil in a large skillet, over medium heat. Add the shawarma spice mix and cook for one minute, stirring constantly.
Add the chickpeas and toss well to coat. Cook for 2-3 minutes and add parsley. .
Assemble the shawarma bowl with cooked quinoa, tomato cucumber salad. Drizzle with tahini dressing & a squeeze of lemon to taste. Garnish with chopped mint & parsley. Enjoy!
