Asian-Inspired Buddha Bowl

I wanted to share one of my favorite Buddha Bowls. This delicious Asian-inspired Buddha Bowl makes for a great lunch that you can take on the go. It’s also great for meal preps, but you'll have to store the dressing separately. You can see my video on my @nikishariley instgram to watch me build this Buddah Bowl.

Asian inspired Buddha Bowl

edamame
spinach
purple cabbage
carrots
1 cup cooked red quinoa
tomato
yellow pepper
cucumber
scallion



Ginger Scallion Dressing

1 clove garlic
1 tbsp. grated ginger
1/4 c. scallions
1 tbsp. maple syrup
4 tbsp. soy sauce or coconut aminos
2 tbsp. rice vinegar
1 tsp. sesame oil
1/2 cup. safflower oil
